Ingredients
3-4 cups dark, leafy greens
1/2 chopped honey crisp apple
1 Tbsp of dried cranberries or pomegranate seeds
1 Tbsp of toasted pumpkin seeds, pine seeds or walnuts
1 Tbsp of low-fat feta cheese
3.5oz shredded chicken

Dressing: toss with Diata homemade apple cider vinaigrette.

- Toss all ingredients together and enjoy!

For a seasonal twist, top with slices of roasted acorn squash (cook in the oven at 375 degrees, 20 min of each side).

Dark, leafy greens hold their texture well and will stay crunchy for a few days, so this is a great one to prep in advance for lunches!
