Blueberry-Lemon Summer Parfaits


1/2 cup of organic blueberries (fresh or frozen)

1 Diata Health vanilla shake

2 lemon or cinnamon SmartCakes

1/2 - 1 Tbsp monkfruit sugar


Recommended topping: lemon rind, mint leaf, fresh strawberries or blueberries, or frozen mashed peaches

How to prepare

- Prep all ingredients prior to assembling: add water to pudding mix, and cut cakes into small squares (or into three 1/2 inch layers)

- In neat rows, alternate layering the cake, then fruit, then pudding.

-Place the refrigerator for 1 hour to chill prior to serving.

-Top with garnishes as desired, and enjoy!

Tips and tricks

Substitute in other fruits as desired. We love strawberries, raspberries, frozen peaches and mangos.
